Fifteen dishes to open a meal, meant for the middle of the table rather than one person. Kung Chae Nam Pla is raw prawn in chilli, garlic and fish sauce; Satay comes with peanut sauce; the tord mun fishcakes and the deep-fried prawns and calamari are the easiest things to start with if the table is new to Thai food. Soups

Thai soups are eaten alongside the rest of the table, not before it. Tom Yum Kung is the hot and sour one, sharp with lime and lemongrass; Tom Kha swaps that sharpness for coconut milk and lands mild; Gaeng Som is sourer again. Five soups, HK$72 to HK$98, and every one can be ordered milder.

Salads

21 dishes

The biggest section on the menu, and the one least like a Western salad: twenty-one yum and tum dishes dressed with lime, fish sauce and chilli rather than oil. Som Tum Thai is the pounded green papaya salad, Yum Som O is pomelo with prawns, and the yum dishes cover tuna, squid and beef. Most are hot as they come and all can be pulled back. HK$92 to HK$176.

Curry

5 dishes

Five Thai curries, each built on its own paste. Gaeng Kiew Wan is the green curry and the hottest; Gaeng Mussaman is mild and sweet; Gaeng Garee is the yellow curry with potato and onion; Panaeng is the thickest and driest of them. Between HK$116 and HK$118, each with a choice of protein or vegetables. Steamed rice is ordered separately.

Meat Dishes

9 dishes

Nine stir-fries and curries built around chicken, pork, beef or duck. Pad Med Mamuang is the mild cashew-nut stir-fry, Gaeng Pet Yang is roast duck in red curry, and Gaeng Hung Ley is the slow northern Burmese-style pork curry. HK$122 to HK$138, and most take your choice of meat.

Whole and filleted fish dishes. Pla Da Diew Pad Sot Prik Tai Dum is halibut stir-fried with mixed peppers, onion and black pepper sauce. HK$174.

Seafood Dishes

24 dishes

The largest seafood section: twenty-four dishes across crab, prawn, squid, mussel and whole fish. Boo Nim is soft-shell crab, Pla Chu Chee is fish in thick red curry, and Hoi Maeng Poo Mor Din is mussels steamed with Thai herbs. The two whole-crab dishes are priced by weight on the day and need a day or two’s notice. HK$108 to HK$282.

Vegetables

12 dishes

Twelve vegetable dishes, several of them substantial enough to be a main. Pak Bung Fai Daeng is morning glory stir-fried hard and fast, Pad Pak Ruam Mit is the mixed stir-fry, and Dao Hoo Pad Kaprao is bean curd with holy basil and chilli. HK$82 to HK$102. Note that several are cooked with fish sauce or shrimp paste — ask if you need them without.

Rice

12 dishes

Twelve rice dishes, from a bowl of steamed jasmine rice to fried rice with crab. Khao Pad Tomyum carries the tom yum flavours into fried rice; Khao Guk Kapi is the shrimp-paste rice served with its own set of garnishes. HK$18 for plain rice, up to HK$172 for the richest of the fried rices.

Noodles

10 dishes

Ten noodle dishes. Pad Thai is the rice-noodle stir-fry with tamarind that most people arrive for; Khao Soi Gai is the Chiang Mai curry noodle with chicken; the Guey Tiew dishes use flat rice noodles and take your choice of meat or vegetables. HK$96 to HK$110, and ready about fifteen minutes after ordering.

Three grilled dishes served with their own dipping sauces. Gai Yang is Thai-style grilled chicken, Sai Oah is the northern Thai herb sausage, and Phae Yang is the house grilled lamb. HK$108 to HK$175.

Three dishes cooked over the grill: Pla Paow is a whole fish wrapped and baked with Thai herbs and chilli sauce, alongside grilled tuna and grilled squid. HK$115 to HK$258.

Specials

Five dishes that sit outside the usual sections. Kha Moo Tord is pork knuckle slow-cooked then deep-fried until crisp and served with samrod sauce; the Pla Da Diew dishes are halibut prepared three different ways. HK$145 to HK$208.

Desserts

Five Thai desserts. Khao Niew Mamuang is mango with coconut sticky rice, Chendol is mixed Thai jelly with crushed ice and coconut milk, and the fruit platter comes in two sizes. HK$42 to HK$120.

Coffee / Tea

10 dishes

Coffee and tea, hot. Espresso through to cafe latte, plus jasmine, Earl Grey and mint. HK$32 to HK$48.

Beverages

4 dishes

Soft drinks. Three NEON TIGER sodas — mango, passion fruit and calamansi, and pink guava — plus Singha soda water from Thailand. HK$18 to HK$32.

Two beers: Singha, the original Thai lager, and Damm Lemon, a Spanish shandy-style lemon beer. HK$28 to HK$32.
